Chimichurri Sauce
Chimichurri is a tangy sauce made with fresh herbs, garlic, olive oil, and vinegar. Drizzle it over roasted vegetables, use it as a salad dressing, or serve as a side with any grilled meat for a wonderful pop of flavor.
⅓ cup extra-virgin olive oil
2 tablespoons white wine vinegar
1 garlic clove, minced
1 medium red onion finely chopped
½ teaspoon sea salt
¼ teaspoon dried oregano
¼ teaspoon red pepper flakes
¼ teaspoon smoked paprika
½ cup finely chopped fresh flat-leaf parsley, (from about 1 bunch of parsley, coarse stems removed)
Instructions:
In a small bowl, combine olive oil, vinegar, garlic, salt, oregano, red pepper flakes, and smoked paprika. Chop the the parsley and stir into the oil mixture. You can also combine the ingredients in a food processor. Pulse a few times to mix. Season with more salt and pepper as desired.
Serve over meat or roasted vegetables. Enjoy!
